Influence of live weight of lambs at slaughter on structure of amino acids in musculus longissimus dorsi

The dependence of amino acid structure on live weight was studied in musculus longissimus dorsi of lambs of the Tsigai breed divided into three groups. The amino acids were determined in the amino acid analyzer T 339. The results showed that the amino acid structure changes in dependence on live weight. The highest amino acid content was observed in the 2nd group of lambs (live weight 43.80 kg). Content of amino acids decreased in older, heavier lambs of 3rd group (l.w. 51.30 kg) under the level noticed in 1st group of lambs (live weight 34.0 kg). Statistically significant differences were found mainly in essential amino acids.
