Storage of 'Chanee' durian pulp

Ripe 'Chanee' durian pulp remained acceptable to the consumers after storage in polystyrene trays overwrapped with stretch LLDPE film at 4, 8 and 12 deg C for 24, 16 and 12 days. Their respective values of pulp firmness and weight loss were 0.25, 0.25 and 0.19 kg/square cm; and 0.75, 1.42 and 0.98 % when the experiment was terminated. At all storage temperatures, pulp color changed slightly throughout the experimental period. Headspace concentration of CO2 increased gradually during the early part of storage duration, but decreased steadily later while that of O2 was opposite. However, a change in headspace C2H4 concentration was less consistent. Soluble solids content and titratable acidity increased with time in storage
