Storage of 'Monthong' durian pulp

Ripe 'Monthong' durian pulp stored in polystyrene trays overwrapped with stretch LLDPE film at 4, 8 and 12 deg C remained acceptable to the consumers after 28, 16 and 8 days in storage. Their respective values of weight loss and firmness were 0.6, 1.0 and 0.7 % and 0.05, 0.10 and 0.10 kg/square cm when the experiment was terminated. At all storage temperatures, pulp color changed slightly throughout the experimental period. Headspace concentrations of CO2 and C2H4 increased during the early part of the storage duration, but decreased later while that of O2 was opposite. However, soluble solids content and titratable acidity remained unchanged.
