Some lipids characteristics of fallow deer (Cervus dama dama L.)

The purpose of this work was to examine total lipid content and fatty acid composition in muscle tissue (musculus semimembranosus) and fatty tissue (kidney outside fat) of fallow deer. This kind of game is being grown at farms in many European countries. Present study gives also fatty acids composition of total lipids as well as content of phospholipids and glucolipids. The total lipids were extracted by procedure according to Folch. The lipid fractions were fractionated with a Silica gel column to neutral lipids, glucolipids and phospholipids according to the procedure described by Johnston. Mass content of fractions were determined gravimetrically and expressed as percentage of total lipids. The identification and the quantitative analysis of the methyl esters of fatty acids of total lipids (prepared after hydrolysis and derivatization with diazomethane) were performed on a capillary gas chromatograph. The compounds were identified by comparing them with reference substances.
