Influence of Fe and Zn foliar application on the nutritional quality of bean (Phaseolus vulgarisl)

The effect of Fe and Zn foliar application on the nutritional quality of bean was studied, fe and Zn concentration within the seeds increased significantly with the application of Fe and Zn, respectively. The increase in Fe and-or Zn concentration varied significantly depending upon the Fe and-or Zn treatment. Fe and Zn were mutually antagontisic, Zn application at a rate higher than 160 g per feddan depressed carbohydrate percent significantly at all Fe levels while Fe had no significant effect on carbohydrate percent at all Zn levels. Increasing Fe and-or Zn levels increased protein content of the seeds significantly. Fe and-or Zn significantly decreased the carbohydrate: protein ratio in the seeds, this trend might have focused a great attention on the nutritional quality of dry bean seeds as far as human consumption is concerned
