Vimba, J. | Markevica, L. (Latvian Univ. of Agriculture, Jelgava (Latvia). Dept. of Food Technology)
The given research was carried out to investigate the quality of deer meat for its use in human diet and particularly with the aim of its export. The content of cesium 134+137 and heavy metals (As, Pb, Hg, Zn, Cu, Cd) in meat was determined. Experimental animals were brought from various districts of Latvia, and meat samples were taken in different periods of time. The analyses of the meat samples indicate that neither the radioactivity nor the heavy metal content exceed the permissible level.
