Nutrition composition of copra cake-based food products

Different levels of copra cake incorporated in twenty two food products: meat loaf, hamburger, fishball, lumpiang shanghai, pandesal, loaf bread, banana coconut bread, brownies, cookies, mooncake, cupcake, pancake, empanada, biscuits, pretzels, kroepeck, chips, pie, macaroons, candy and pasta resulted in products that are generally acceptable. The addition of copra cake into these products increased the ash, calcium, crude and dietary fiber contents more than protein, iron and carbohydrates, more than fat and phosphorus. Food cost of the products are also cheaper. Thus, copra cake is a cheap source of protein-fiber rich foods
