[Objectivation of wine colour observation by an up-to-date method]

The authors present the results of experiments they made for objective determination of colour in 22 wine samples from different Moldavian winegrowing regions. Three methods of colour determination were parallely applied: OIV usual method (sum and ratio of absorbencies); OIV reference method (CIE xy 31 method); CIE Lab-76 method. The comparison between the result obtained by the thee methods and their comparison to the results of the organoleptic examination emphasise the deficiences of the OIV official method. Consequently, the use of CIE Lab-76 method, as a reference one, is recommended. For monitoring wine production processes is also recommended to allow (and maintain) the current use of the OIV usual method.
