Anthocyan colouring agent as a potential bifidogenic factor

Influence of media on the growth of biomass of various bifidobacteria strains was investigated. Compared to the MRS medium, formation of biomass was higher and more intensive on VF medium with 0.5 percent addition of vitamin K. Impact of anthocyan colouring agent concentrate from black chokeberry (Aronia melanocarpa) on biomass formation of bifidobacteria (Bifidobacterium bifidum, B. longam and B. breve) was tested on whey medium with 1 percent of yeast autolysate added with 5 percent of anthocyan colour concentrate from black chokeberry. Positive influence of anthocyan colouring agent on the formation of biomass by tested bifidobacteria was detected. Growth of biomass was 2 to 3 times higher compared to non-added medium and almost 2 times higher in comparison to the medium to which was added concentrated spinach juice
