The new approach to defining the moisture diffusion coefficient during drying of moist bodies is shown in this paper. On the basis of experimental data for drying kinetics of model material spheres processed by the ITE method, and empirical function connecting drying ciefficient (Kun) and moisture diffusion coefficient for instant spheres temperature and moisture was obtained. Moisture diffusion coefficients obtained in this manner have satisfactorily agreed with rigously obtained diffusion coefficient for model material. Application of this method was tested for real materials using wheat and corn. Assuming that in fact geometric form of wheat and corn grain can be approximated with sphere, drying coefficient (Kun) for wheat and corn were multiplied by empirical function obtained for model material spheres. Obtained diffusion coefficients were generalized as a function of corresponding average temperatures and humidities. With those function for diffusion coefficients drying process (for wheat and corn) calculations were carried out by numerical solving of Luikov's partial differential equations and compared with drying kinetics experimental data.
