[Dry concentrates of oat hydrolysat]

As the soluble fraction of oat hydrolysat is used as a partial fat substitute and as a source of dietary fibre, experiments were carried out to test several drying methods for the production of oat hydrolysat concentrates. The materials used in the experiments were commercially produced oat flakes, oat grain, oat flour and bran. The drying methods tested in the experiments are described. The production scheme of oat hydrolysat dry powder as well as the drying curves at different temperatures are shown graphically. The results of oat hydrolysat drying by the direct contact method are presented in a table.
