The present invention relates to a process for the manufacture of pasta, in which a mixture of cereal flour or semolina and water having a water content of about 25-40 percent is prepared, the mixture is kneaded and it is extruded, distinguishes itself by the fact that the mixture is extruded by pressing it through an extrusion die with the aid of a gear pump. In this process, the mixing and/or kneading operations are preferably carried out in a device with two screws rotating in the same direction and meshing with each other
