The new way of defining the heat and mass transfer coefficients during drying of moist bodies is shown in this paper. According to the outlined approach, Nusselt and Schmidt numbers are not functions of Reynolds and Prandtl numbers solely, but also of the vapor flux through the moist bodies surface. The new approach is tested for the case of drying of spheres, made of model material, in a fixed bed. The safisfactory results obtained have shown that the ITE method, applicable in engineering practice, were used for the analysis of real material drying kinetics and dynamics. In this paper, the results obtained for corn and wheat grains are shown. The outlined idea was verified on the basis of drying kinetics calculations for wheat and corn grains using numerical solution of differential equations for heat and mass transfer.
