Hygienic state of raw cow milk

In a two years period (1998-1999) a total of 16,382 specimens of purchaseable row cow milk were assessed. Results indicate that according to the total microbial count 8,5% of the milk batches were high (extra) quality, 22,7% of first grade quality, 35,8% of second grade quality while 33% were og low quality and were not up to the requirements of the Bulgarian State Standard. In accordance with the total somatic cell count 19,5% of the batches were of high quality, 32,2% of first and 32,4% of second grade quality and 15,7% of low quality. Out of the cow milk offerred for sale in Sofia only 53,8% and 87,8% were in line with the requirements of the Bulgarian Standard concerning the total microbial and somatic cell count, respectively.
