Content of nutrients in horticultural crops is closely related to the production of different chemical compounds such as chlorophylls, carotenoids, vitamins, carbohydrates etc. affecting on postharvest quality of vegetables and fruits. In 1999 fruits and vegetables were analysed for macro- (C, N, P, K, Ca, Mg) and micronutients (Mn, Zn, Fe, B, Cu). Samples of vegetables (cabbages, cauliflowers, cucumbers, potatoes), and fruits (strawberries, apples) were collected from different commercial farms in South-Estonia.
