In the framework of an european nutritional project, a mathematical pattern for the geometrical isomerization of the linoleic and linolenic acids was developped in order to produce the requested selectively isomerized oil with a high level of trans linolenic acid isomer (5 %) and a minimum level of trans linolenic acid isomers. Experiments were carried out, first using a laboratory deodorizer with a capacity of about 3 L. Differing from linoleic acid, a decrease of the total linolenic acid content called "degradation" was observed during the deodorization and considered when developping the equations of the pattern. The equations describing the degradation and the isomerization of the polyunsaturated fatty acids are those of first order reactions. The corresponding kinetics coefficients follow up the Arrhenius'law. The pattern was confirmed on a pilot scale with a 1OO L deodorizer. The best conditions needed to produce the oil for the study were deduced from theoretical considerations. Isomerization tables are an easy way to select the temperature-time couples respecting an isomerization target. The pattern can ako help us to check the good working of industrial deodorizers and to chose new ones. Relative to this last point, the application of the pattern to industrial equipments has shown that at least, one of them, was isomerizing too much
