[Lysozyme in bee products]

The given research was carried out to determine the content of lysozyme in honey. Nowadays for the determination of lysozyme activity two basic methods are used: the diffusion agar method and the turbidimetrical method. In the given research the lysozyme content in honey was determined by several modifications of the turbidimetrical method. The honey used for the research was obtained from the apiary in the region of Cesis (Latvia). The honey corresponded to the international quality requirements of biological products. By means of the above mentioned method the presence of lysozyme in the honey was not found.
