Although in the last decades technological quality of bread wheat has reach high patterns, breeding for stability and reliability of quality traits is of extremely importance. The present study was designed to evaluate quality and assess stability across locations in a group of advanced lines from the breeding program of ENMP, grown in a range of environments during 2 years. An analysis of variance (ANOVA) including the factors genotype and environment was performed for quality parameters. Protein content, SDS sedimentation test and alveographic parameters showed big variation. Genotype-environment interaction variation was partitioned by a joint regression analysis describing genotype responses to environment mean. AMMI analysis was also performed, and variation of the interaction was better explained by AMMI results. Was possible to identify improved genotypes with high quality potential as well as good stability and reability. For breeding purposes W and P from the alveographic test and SDS must be considered once its expression is mainly due to the genomic factors on the reverse L and protein content reveal high influence from environmental conditions
