The invention deals with the method of postharvest treatment of stevia, particularly with the process of drying Stevia rebaudiana Bertoni. The method includes such phases as stewing, colour fixation and drying with reducing the relative humidity of the drying agent according to the phases. The method proposed allows to obtain stevia suitable for further storage, transportation and processing in less time and at less energy consumption with keeping the high content of sweet components in its composition
