[Forecasting and determining the guaranteed storage life for flour confectionery]

Influence of various technological factors on the storage of flour confectionery products is investigated and the development of a techhnology for the products of the type with prolongued storage life is conducted. Based on the complex studies the classification of the flour confectionery product is developed and scientifically substantiated and thus their storage life is determined in accordance with a dominant factor. Effect of domestic packaging materials on keeping qualities of the flour confectionery products while storing is examined. Methodology and a mathematic model of quality estimation while storing are elaborated
