[Development of the technology of combined meat products with the use of a polyfunctional collagen preparation]

A production technology for a polyfunctional collagen preparation (PPC) intended for obtaining a protein and fat emulsion (PFE) is developed and substantiated. Possibilities are revealed for regulating the chemical composition and functional and technological properties of the combined meat products enriched with the PFE obtained. Recommendations are provided on the culinary use of the combined minced meat with PFE
