[Development of technologies of sugar substitutes and food products for dietary and prophylactic purpose]

The thesis comprises results of theoretical and applied studies on the methods of obtaining the artificial sweetener otyzon and natural sweeteners from the licorice root. Production methods for foods of dietary purpose on their basis are elucidated as well. The experimental and industrial introduction of the otyzon is carried out. The technological regimes for complex processing of the root is elaborated. Data on effectiveness of the sweeteners are reported. The results of the study are outlined in 63 scientific papers and three patents
