[Development of biotechnology of obtaining natural carbohydrate-containing sweeteners]

The problem under study is obtaining multicarbohydrate sweeteners in a form of the isomaltooligosaccharide (IMOS)-enriched syrups capable of increasing the useful microorganisms content in human gastrointestinal tract. The microorganism Aureobasidium pullulans is revealed to be an effective producer of an enzymatic preparation for the maltose-based IMOS biosynthesis. A scheme of obtaining the enzymatic preparation with the transglycosylase activity based on producer's intact cells is developed. The process of obtaining the maltose as a substrate for transglycosylating from grain starch-containing raw materials through conversion by barley malt enzymes is studied. The composition of maltose syrups from various raw materials is determined. The process of the enzymatic conversion of maltose syrups into the IMOS-enriched multicarbohydrate syrups is studied and the industrial technology of their obtaining is developed. Testing on rats proved that taking new types of syrups while eating provides a rise in the content of bifidobacteria and lactobacilli in the intestine microflora
