Comparative characteristics of fat tissue of lamb carcasses from local sheep

Objective of the present study was comparative on some characteristics of fat tissue related to quality of lam carcasses from local sheep.Research experiment was carried out with 2 groups from Karakachan breed and from West Stara planina breed (WB).At rearing 25-35 kg live weight 6 lambs of each group were slaughtered.With increase of preslaughter weight of Karakachan carcasses more subcutaneous fat was accumulated at the trait root.For carcasses of WB subcutaneous fat was spread evenly without formation of marked accumulation at separate antatomic parts for both preslaughter weights.With the highest rate were carcasses with bright-cream color of subcutaneous fat and with low degree of fattening.
