Comparative study was carried out on physicochemical haracteristics and micro-morphological particularities of m. Longissimus dorsi in three groups of lambs, distributed in the following way: I group (F1 crosses of Southh-Bulgarian Corriedale ewes with Texel rams) , II group (F2 crosses with Texel breed) and III group (purebred lambs of South-Bulgarian Corriedale).No considerable differences were found between the studied groups of lambs concerrning value of pH24 and water retaining capacity of m. Longissimus dorsi.Micro-morphological differences existed between groups of lambs in histostructure of m. Longissimus dorsi.Lambs crosses were with higher content of white muscle fibres.Lambs crosses were with higher content of muscle and intramuscle fat.
