Influence of time and Aw during storage on the vitamin content of enteral feeding formula

Two different enteral feeding formula were stored at 30 deg C for up to 6 months with no Aw (water activity) and Aw=0.44. The modifications in thiamin, tocopherols (alfa-, gamma- and delta-tocopherol) and retinols (all-trans and 13-cis-retinol) content were studied. Formula I and II stored at 30 deg C and Aw=0.44 had a gradual loss of vitamin content from 1 month to 6 months. When Formula II was stored at 30 deg C and no Aw a very slight, but significant, reduction in vitamin content were obtained after 3 months, similar to those stored for 1 month with Aw=0.44, and from that time onwards a gradual decrease in vitamin content was found. Aw has a noticeable influence on vitamin content during storage.
