[Important effects of metabolites of microscopical fungi]
2000
Turek, B. (Statni Zdravotni Ustav, Prague (Czech Republic))
Moulds are known to produce a wide range of secondary metabolites. Some of them are already used in food or other industries. Some of these substances are also interesting for their beneficial effects on human health. This is the case of cholestin, a secondary metabolite of Monascus purpureus, which reduces blood concentrations of cholesterol and LDL. However, cholestin is not FDA-approved because of its possible toxic effects on hepatocytes and muscle tissues.
