Content of lead and cadmium in foodstuffs

With the development of industry the pollution of environment and food products with heavy metals and other toxic elements becomes an important problem. The content of noxious chemical elements in food, water, air and soil is controlled by the state. Lead and cadmium are considered to be the most harmful conteminants of food products. In the given study more than 1000 different foodstuffs of Latvian origin and imported one were investigated for cadmium and lead content using ETAAS. The investigation results are presented in tables. It may be concluded that on the whole the level of contemination in food products corresponded to the required safety criteria of the Latvian legislation, though vegetables, nuts and mushrooms must be strictly controlled.
