Thin layer drying simulation of PSB Rc 54 at various temperatures and relative humidities has been undertaken using an environmental chamber fitted with fan and bin. The objective of the study is to develop drying strategies, which will result in higher drying rates while maintaining grain quality. Results show if two-stage drying is used, the drying rate can be achieved without significant losses in grain quality. First stage could utilize higher air drying temperature to remove surface moisture at high moisture content (above 20% moisture content wet basis) while second stage should use lower temperature (40 deg C) to remove internal moisture. Results also show that grains subjected to air temperature of 60 deg C and above (whether first or second stage) loose their viability. Milling recovery and whiteness are not signficantly affected by air drying temperature range of the experiment
