Effect of linear drying shrinkages and shapes of solid bodies on their drying kinetics

Studies on kinetics of vegetable convection drying showed existence of the first period in their drying process. Non-linear changes of moisture content (dry basis) in that period result from shrinking dried particles. Non-linear mathematical model of that period includes N-coefficient, the value of which depends on superficial shrinkage of dried particles; until now it was determined by the method of successive approximation. In presented study the method of determining N-coefficient in analytical way was described and the model of this coefficient was formulated for the bodies of cuboid shape. The model was empirically verified for slices of red beet roots
