Studies on the formation of ochratoxin-A in Sultanas and factors effecting occurance

The research work was planned after the incidence of ochratoxin-A in raisins during the 1996 season. Sultana samples taken from the exported lots in 1997 and 1998 and were analyzed by different laboratories. In 1998, soil and fruit (pre-harvest, fresh harvest, dried) samples were collected from 9 different locations in the Aegean Region which comprises 27.99% of the vineyards, 41.35% of the production in Turkey. Total mould counts were determined and identified. Ochratoxin-A analyses were carried out, as well. A questionairre was prepared to collect data related to topography, grapevine establishment, irrigation and other cultural practices. The results showed that ochratoxin-A formation is not a storage problem but starts in the vineyard while on the grapevine. Although the ratio of OA positive samples are similar for grape and sultana raisins, the levels were found higher after drying. The frequency was higher in irrigated vineyards
