Influence of selenium on anticarcinogens level in lettuce (Lactuca sativa L.)

Lettuce, a vegetable crop, is very recommendable in diets, because of low calories and high level of anticarcinogenic matters. There were observed the influence of different selenite concentrations (0, 1, 5 and 10 mg/l Se) on content of anticarcinogenic matters. Nearby the same selenium has anticarcinogenic effect too, it decreased lettuce yield, Mg, glutathione, low molecular thiols, vitamins C and phytine level and increased beta-carotene and Se level, but didn't affect chlorophyll content. It is recommended 1 mg/l Se dose for noorishing, while it is optimal level of other anticarcinogenic compounds and increased beta-carotene and Se level in lettuce.
