Tomato is rich in antioxidants. Apart from lycopene, tomato is also rich in carotinoid contents (beta-carotene), vitamins (vitamin C), minerals, flavonoids and phenolic acids which help preventing the diseases (especially cancerous and coronary). There is a European Association whose basic work is collecting the antioxidative composition of tomato and its products. The composition differs depending on the genotype and the mutant (especially mutants of maturing) where the carotinoid contents are considerably different. Tomato selection from the view of the increased nutritional values goes into several directions. Some of them are tomato selection and breeding, growing and the particular aspect of fruit ripening as biotechnological procedures. They represent a large segment of investigation based on increasing the lycopene content in fruit.
