The present study is interested in evaluation of the surface microbiological quality of bovine carcasses in the beginning of slaughterline, just after evisceration. The samples have been drawn on by excision method. These samples were taken from tree sites: the perished-anal, the necklace, and the lumbar. The bacteriological evaluation concerns the total viable flora count (psychrotrophics, sporuleds, staphylococcus), and faecal coliforms and salmonellae qualitative search. The counting vary recording to carcasses sites and season. The neck presents the highest level of contamination, followed by the perished-anal site, while the lumbar area representing the inner site shows the lowest level (for total viable flora count and staphylococcus), but for psychrotrophics the highest level is in the lumbar site, for sporuleds and coliforms the perished-anal site is followed by the necklace.
