Producing of beta-galactosidase from Asspergillus oryzae H 26-10-7 passes at strictly specific conditions including the composition of the nutrition medium. The biosynthesis of the enzyme is induced at the highest level by arabinose and galactose, but not by lactose. The substitution of synthetic inductors in the nutrition medium with soya-bean groats and soya-bean flour at concentration of 5% stimulate the enzyme production at a higher level. Ammonium salts satisfy the needs of investigated strain with nitrogen for its constructive metabolism and increased production of beta-galactosidase better than nitrate salts. The biosynthesis of the enzyme is stimulated by addition of sugar-beet slices in the nutrition medium at concentration of 1,0-2,5%.
