Minerals in milk

The composition of milk salts is influenced by a number of factors, including breed, individuality of the cow, stage of lactation, season of the year, mastitic infection and feed. Milk Ca content was lower for cows fed with medium and high K level in diets, as compared to those fed with low K diet. The Ca content in milk was significantly larger when the barley-based compared with the oat-based concentrate was fed. The use of barley-based concentrate in feed resulted in significantly larger content of Ca in milk, as compared to that of oat-based concentrate. Relatively small changes in the concentrations of milk salts, especially of Ca, P and citrate, have significant effect on the processing characteristics of milk. The milk minerals have been not intensively studied in Estonia. At the Dairy Laboratory of the Institute of Animal Science of Estonian Agricultural University since January 2001 the concentrations of calcium and phosphor in milk have been regularly determined. The data obtained and collected will be used in the studies on the factors influencing the contents of minerals in milk
