During the last years, the process of integration of Hungary into the EU directed the attention - besides many others - to the questions of quality of agricultural products as well. The success on the international market requires that the food products to be sold can complete with the products of the EU. This makes indispensable to pay special attention to keeping the international requirements of food quality. Measurement of Total Volatile Basic Nitrogen (VTBN) is widely used in the international literature for objective characterisation of the freshness of fish products with chemical methods. (cont.)
