Chemical oxidation with Fenton's reagent of black-olive wastewater was studied. The evolution of global parameters directly related to organic mater like are: chemical oxygen demand (COD), aromaticity (A) and phenolic compounds (TP) was followed during the experiments. Chemical oxygen demand reductions was between 29% and 74%, the average removal of aromaticity was in the range 35%-83%, while total polyphenolic content degradation was between 27%-91%. A kinetic study based on each variable was performed in order to determine the apparent kinetic constant which were correlated with the temperature and initial hydrogen peroxide concentration
