Comparsion of chemical composition of breast and thigh muscular substance in 12 weeks old Tesedikovo geese

The results of chemical analysis in breast and thigh muscles with skin of geese and ganders at the age of 12 weeks showed the favourable values of water holding capacity, the high content of total proteins (18.28 - 21.28 g/100 g) and a very favourable content of fat which does not overstep 18.38 g/100 g, which represents 0.18 up to 0.47% yield of live mass, or 0.32 - 0.80% of carcass mass. The thigh musculature had higher content of whole and also connective tissue proteins and higher content of total water. The breast musculature had higher content of fat and therefore also higher energetic value. Energetic value of breast and thigh muscles with the skin do not overstep the value of 1022.6 kJ/100 g. Concerning minerals we found statistically high significant difference only in the content of iron. Significant was also the high content of microelement iron Fe (21.5 - 39.61 mg/kg, as well as of other analysed minerals (Ca, Mg, Na, K).
