Mycotoxins and human health risk

The occurrence of the most dangerous mycotoxins in different foodstuffs as well as the dietary exposition of the Czech population to mycotoxins was monitored in the Czech Republic during the nineties. The aflatoxins were detected especially in different nuts, dry fruits, spices, soja and maize products, ochratoxin A was found in cereals, raisins and coffee, patulin especially in apples and apple products, deoxynivalenol and zearalenone in cereals and cereal products, fumonisin B1 in maize and maize products. Aflatoxin M1 was found in the urine and ochratoxin A in the blood serum of the Czech population in 4 Czech districts monitored for mycotosins exposition.
