Puessa, T. (Estonian Agricultural University, Tartu (Estonia))
The paper is a short interpretation and explanation of modern term "functional food", marking food, which contains special health-promoting components. Most of them are phytochemicals possessing antioxidant property. They mainly belong to polyphenols of different classes. The "hottest" of them is trans-resveratrol, a stilbene found in many plants like grapevine, muscadine, peanut, Japanese knotweed, yucca, cranberry etc. Resveratrol is considered to be related with so-called "French paradox", trans-resveratrol and its derivatives are expected to become one of the central points in developing of novel functional foods
