Combined effect of divercin and traditional preservatives on Listeria monocytogenes growth

Efficacy of divercin in combination with traditional preservatives against Listeria monocytogenes Scott A. was examined. The results of investigation show that 1-2 percent NaCl addition decreased divercin activity, whereas 5-10 percent NaCl addition had synergistic effect on its activity. It was also found that the decrease of pH value to 4.5 using lactic acid or citric acid limited divercin bactericidal activity. The activity of divercin is also influenced by other substances. Thus, the presence of 200 AU/ml of divercin combined with 1,000-2,000 mgl/l sodium benzoate inhibited Listeria growth greater than these individual substances. The combination of divercin and sodium benzoate showed the best antilisterial activity. After 24 h of incubation a complete inactivation of L. monocytogenes was achieved. It was proved that using divercin in combination with 5-10 percent NaCl and 1,000-2,000 mg/l sodium benzoate may be better method for food protection
