The cholesterol content in meat of fatteners slaughtered at different body weight

The researches were conducted on crossbred fatteners original from crossing sows L (Polish Landrace), crossbred sows LY (sow Polish Landrace x boar Polish Large White) and YL (sow Polish Large White x boar Polish Landrace) with boars Hampshire (H) - [LH, LYH], Pietrain (P) - [LP, LYP], boar (sow Duroc x boar Prietrain) - [LDP, LYDP, YLDP] and 990 line - [LY990, YL990]. Fatteners from each crossing scheme were slaughtered at 7 different weight ranges: 90-95, 96-100, 101-105, 106-110, 111-115, 116-120, 121-130 kg. In loin muscle (M. longissimus dorsi) and in ham muscle (m. semimembranosus) was the cholesterol level assessed
