Rutin, quercitrin and quercetin in buckwheat

Flavonoids are secondary plant metabolites and are synthetized in higher plants, ferns and mosses in order to protect themselves against ultraviolet radiation and against diseases. Buckwheat is the only field crop that contains rutin and is also due to its high nutritional value of the grains considered as an important functional food. The most of rutin is synthetized in the herb. Seeds contain less flavonoids, which are localized mostly in outer parts of grains. Green buckwheat tea became more used since it is known for its beneficial effects of rutin on cardiovascular disease, reducing risk of artheriosclerosis and for its antioxidative effect.
