Inulin and oligofructose are natural food ingredients and represent a carbohydrate reserve in many plants. They are a mixture of oligomers and polymers of fructose. Inulin and oligofructose possess several functional and nutritional properties and have health benefits. In this article a short description of technological properties, nutritional characteristics and the use of inulin and oligofructose in food is given.
