Linear measures and their relation to indicator of meatiness in live animals and carcasses

The results of analyzing the relation between linear measures and indicators of meatiness in living animals and halves are shown in this paper. Referring to the results presented, it appears that the stronger correlation is determined for SL2 in comparison with SL1. Also, it can be concluded that the correlation between PIGLOG 105 and dissection for meatiness is stronger than the correlation between the dissection and JUS as estimated for the same trait. It can be remarked that JUS assesses meatiness (%, kg) in halves with lower degree of reliability on comparing with PIGLOG 105. All this confirms the fact that the Yugoslav standard concerning meaty swines for industrial processing JUS E.CL.021, passed in 1969 and modified in 1985, does not give a sufficiently accurate basis for the estimation of meatiness in the slaughter line. Our present standard is more adapted to bacon swines than to swines of meaty type which are characterized by deeper backfat of diferent fascia pattern, shorter halves but, also, by better conformation and meatiness. Therefore, by applying JUS, the real meat yield immediately before slaughter cannot be determined correctly in swines having better conformation.
