The aim of the study was to optimize the HPLC method in order to determine the concentrations of vitamin B6 and niacin in different foodstuffs and to compare the results obtained by this method with those acquired by microbiological methods. The results obtained by the HPLC and microbiological methods were in linear correlation. The RP-HPLC method is suitable for the determination of both vitamin B6 and niacin after acid and enzymatic hydrolysis in food supplements and some foodstuffs. In comparison with the microbiological method the HPLC method is more selective, quicker and less laborious, but the values are higher by 14% in average.
