Inglés. The role of pre harvest and postharvest technology can be used as excellent of pre technology for strasiditing, increasing and adding the selling value of the peppers product. As a commodity that easily to damage, so the pepper needs a special handling. The pepper can be consumed on the fresh condition for spice mixing, beside that the pepper can be preservated or processed as the dried pepper or the pepper flours, sauce, fried rice spice and oleoresin. The activities doing for increasing the added value of the pepper products. Whereas, to give guaranteed for the pepper available on the fresh form, so doing about the pepper storage using the modified atmosphere or controlled atmosphere. This method can retard the metabolism activity of material, so can decreased the damage process and prolong the shelf life

Sebagai komoditi yang mudah rusak cabai memerlukan penanganan khusus untuk memperpanjang masa simpannya. Cabai selain dapat dikonsumsi segar untuk campuran bumbu masak, juga dapat diawetkan atau diolah menjadi cabai kering atau bentuk lain misalnya tepung cabai, saus, bumbu nasi goreng dan oleoresin. Hal ini terutama dilakukan untuk meningkatkan nilai tambah produk cabai. Sedangkan untuk menjamin ketersediaan cabai dalam bentuk segar maka dilakukan penyimpanan cabai dengan modifikasi atmosfir atau udara terkendali. Cara ini mengurangi aktivitas metabolisme bahan sehigga dapat menghambat proses kerusakan dan memperpanjang masa simpan
