Date fruit (Phoenix dactylifera L.) is one of the important summer fruits grown in Pakistan. It is highly perishable in nature. However, it can be consumed throughout the year if properly processed. In view of its curing requirement proper techniques are very essential to keep it healthy for proper supply to the market. The present research work is therefore being envisaged to improve curing technology to enhance the shelf life and quality of fruit through the application of different chemicals. The effect of these chemicals has recorded a significant effect on the color of fruit, shelf life, fruit weight loss, total soluble solids and vitamin C.
