[Method of obtaining hydrolysate from molluscs]

A method of obtaining hydrolyzate from molluscs includes comminuting, mixing thereof with alkali solution, conducting hydrolysis in the course of three hours, separating the shucks from the hydrolyzate and additional treatment with the alkali solution, combining the hydrolyzates obtained, neutralizing with concentrated hydrochloric acid, steaming and pasteurizing thereof. After the comminuting molluscs the intersticial liquid oozed out is separated, frozen and added into the combined hydrolyzate prior to the pasteurization. In addition, the process of hydrolysis is started after placing the molluscs comminuted in a reactor, containing hot water in a ratio 1:0.75, heating up to 60 deg Celsium and adding the alcali solution with a final concentration of 0.5 %
